Grab some store-bought or homemade hummus to make this versatile recipe! Hummus Pinwheels can be stuffed with peppers, purple cabbage, and carrot ribbons – or whatever veggies you like.

These colorful pinwheels are great as an appetizer for a get-together. I love sending them in my daughter’s lunch box, or having them for a quick afternoon snack. This is an awesome way to get your family to eat a little healthier.

Veggie pinwheels can be made a day ahead and will keep in the fridge for a couple of days. This recipe is an easy win for everyone in the family!

Ingredients

  • Purple Cabbage: I love the beautiful color purple cabbage adds to these pinwheels, but you can use regular cabbage if that’s what you have on hand.
  • Bell Peppers: Any color bell peppers will work. Red, orange, and yellow are sweeter, while green peppers have a little bit of a bitter flavor.
  • Carrots: You can make your own carrot ribbons (see the recipe card) or purchase pre-shredded carrots.
  • Hummus: I like to use homemade garlic hummus when I have it on hand, but you can use any kind of homemade or store-bought hummus. Roasted red pepper or black bean hummus are both yummy in these.
  • Soft Tortillas for Wraps: I like to use garden spinach herb wraps, but other flavors work great, too. Just be sure you get the large tortillas.

Recipe Variations

  • You can use a variety of fresh produce in these hummus pinwheels, including thinly sliced cucumbers, spinach leaves or other greens, avocado, tomatoes, red onion, etc.
  • You can also make these without hummus – they’re also great with ranch dip or cream cheese.
  • If you’ve got leftover roasted or grilled vegetables, you can use them to make rainbow pinwheels, too.

✔️ Use shredded carrots for a quick shortcut.

✔️ For best results, roll tightly.

✔️ To make a day ahead, roll each of the filled tortillas up and wrap each one in plastic wrap. Refrigerate until ready to slice and serve.

Storage

To Store: If you have leftover vegetable pinwheels with hummus, you can store them in plastic wrap or in an airtight container in the fridge. (These are my favorite airtight containers.)

Ingredients

  • 4 garden spinach herb wraps or similar large soft tortillas
  • 10 ounces hummus (about 1¼ cups)
  • 2 cups purple cabbage thinly sliced
  • 1 large bell pepper diced
  • 2 large carrots shaved into ribbons or grated

Instructions

  • Spread the hummus on the wrap.
    4 garden spinach herb wraps, 10 ounces hummus
  • Top with veggies.
    2 cups purple cabbage, 1 large bell pepper, 2 large carrots
  • Roll tightly.
  • Chill for 2 hours.
  • Slice with a sharp knife.

Notes

How to Make Carrot Ribbons: Use a sharp vegetable peeler to shave off thin ‘ribbons’ of carrot.
