Ingredients

  • large yellow onions
  • all-purpose flour
  • salt

  • garlic powder
  • paprika
  • baking powder
  • buttermilk

Instructions

  1. Pour the vegetable into a large pot and heat over medium heat until the oil reaches 365 degrees f.6 cups vegetable oil
  2. While the oil is heating whisk together flour, salt, pepper, garlic powder, paprika, and baking powder.5 ounces all-purpose flour,1 teaspoon salt, ½ teaspoon black pepper, 3/4 teaspoon garlic powder, 1/2 teaspoon paprika, 1/2 teaspoon baking powder
  3. Dip the onion rings into the flour mixture and shake off the excess flour.2 large yellow onions
  4. Place the coated onions on a baking sheet, and set aside the remaining flour mixture.
  5. In a measuring cup whisk together the buttermilk and egg until well combined. Add the buttermilk mixture to the reserved flour and whisk until blended.1 cup buttermilk,1 large egg
  6. Add the panko breadcrumbs to another shallow dish.2 1/2 cups Panko bread crumbs
  7. Dip the onion rings into the batter and then shake off the excess batter. Then dip in the panko. Shake off the excess breading.
  8. Place them in the preheated oil and deep fry them until golden brown. Flip them halfway through frying.
  9. Drain on a paper towel-lined plate or baking sheet.
  10. Repeat the process until all the onion rings are cooked. It’s best to work in batches of no more than 10.
  11. Serve warm with ketchup or fry sauce.

Tips for Crispy Onion Rings

Here are some tips for making the very best breaded onion rings that are super crispy:

  • Start by soaking the onion slices in cold water. For the delicious onion flavor to come through, chill the slices in cold water for at least 10 minutes.  After that, be sure to completely dry them off before beginning to batter them.
  • Use cold batter. For crispy onion rings, be sure that your batter is cold. You can even pop it in the refrigerator while you slice the onions.
  • Check the oil temperature. Use a thermometer to check the temperature. The ideal temp for frying onion rings is 365°F. Take care not to overcrowd the pan as that will result in the oil temperature dropping and soggy onion rings.
  • Drain them well. The more oil that can drip off, the better. Line a baking sheet with paper towels and place a wire rack set on top.

While technically you can use any type of onion to make onion rings. I’ve found that Vidalia onions or sweet onions are the best onions because they have a milder flavor to turn sweet when cooked. 

Why won’t my batter stick to my onion rings?

There could be a few reasons for this. Make sure your onions are dry before coating them in the flour. This will help the batter stick better. Also, make sure you are using enough flour before dipping them into the batter. If the batter is too thin or runny, it may not stick well to the onion rings.

How do you keep onion rings from getting soggy?

One way to prevent onion rings from getting soggy is to make sure they are cooked at a high enough temperature. This helps the batter crisp up and prevents it from becoming soggy. Additionally, allowing the onion rings to drain on a paper towel after frying can help absorb excess oil and keep them crispy.
