One of my favorite appetizers to get when we go out to eat is Cheesy Spinach Dip. Unless we’re at a Mexican restaurant, in which case, I’m ordering the Queso Dip every time. I love anything that’s cheesy!

This recipe is such a crowd pleaser and is great for parties and get togethers. I especially like to make it during football season. Hot dips like this make such a great easy appetizer!

🧂 Ingredients

  • olive oil
  • lean ground beef
  • Mild Taco Seasoning Mix
  • yellow onion
  • green bell pepper
  • jalapenos
  • Velvetta cheese
  • Monterey Jack cheese shredded
  • diced tomatoes with chilies
  • salt and pepper

🔪Instructions

  1. Heat a large skillet over medium heat and cook the onions, bell peppers and jalapeno peppers until tender.  
  2. Add the ground beef and increase the heat to high.  
  3. Sprinkle the taco seasoning over the beef and brown, then be sure to drain any excess grease.
  4. Slowly stir in the cheeses, making sure it is incorporated before adding more.
  5. When the mixture is smooth and creamy, add the diced tomatoes and season with salt and pepper.  
  6. Stir in the meat mixture until well combined.
  7. Transfer the queso to a serving dish.
  8. Serve immediately with tortilla chips for dipping.

📖 Variations

The first time you make this recipe, I strongly suggest you follow the recipe instructions as they are written. Afterall, that is how we have tested the recipe. However, the next time you make this homemade queso dip, you might like to adapt the recipe. Here are a few ideas:

  • I use mild Rotel tomatoes with green chilies, but if you like more heat, you can choose another version.
  • Add 1/2 cup of rinsed and drained black beans to the queso dip.
  • Swap out the shredded Monterrey jack cheese for pepper jack cheese instead for more of a spicy kick.

Serving Suggestions

Add a sprinkle of chopped green onions or fresh cilantro on top if you like. This can be served right in the skillet or transfered to a bowl.

Velvetta queso dip can also be kept on the WARM setting on your crockpot or slow cooker. Just be sure to stir it often so it keeps it’s creamy consistency.

I serve my queso with a variety of chips usually. (Although I’d probably eat this off a shoe because it’s THAT good!) It’s great with crackers and even veggies like carrot or celery sticks.

    I used a can of diced tomatoes and green chilies but followed the rest of the recipe. I’ve never made queso with meat before but everyone really liked it with the addition of ground beef. Thanks for the recipe!
