This crockpot Lazy Lasagna is one of the only lasagna recipes my family wants anymore! Once you try it once, you’ll know why! This is one of the easiest lasagna recipes out there, and you don’t even have to simmer a sauce or boil any noodles. It’s the perfect moist and juicy pasta recipe and is great for entertaining large groups or throwing a dinner party. This easy recipe is kid-approved and great for busy weeknights or game day weekends.

🧂 Ingredients

  • Lean ground beef
  • Olive oil
  • Onion
  • Green pepper
  • Tomato sauce (I love using my Homemade Tomato Sauce)
  • Dried basil
  • Granulated garlic
  • Shredded mozzarella cheese
  • Ricotta cheese
  • Parmesan & Romano cheese
  • Lasagna noodles
  • Salt and Pepper to taste

🔪Instructions

  1. In a large skillet, heat the olive oil and cook the peppers and onions until tender.
  2. Add the ground beef, season with salt, pepper, and granulated garlic.
  3. Drain off excess grease.
  4. Stir in the tomato sauce and simmer for 5 minutes.
  5. In a mixing bowl, combine 1 cup of the mozzarella cheese with the grated and ricotta cheeses. Mix until well combined.
  6. The remaining mozzarella cheese will be for the top of the lasagna just before serving so place that back in the refrigerator.
  7. Spoon a fourth of the meat sauce into the bottom of the slow cooker.
  8. Break 5 noodles and place them on top.
  9. Spread half the cheese mixture on top of the noodles. Repeat the layers, ending with sauce on the top.
  10. Set the slow cooker to low, cover and cooker for 4-6 hours until the noodles are tender.
  11. About 10 minutes before serving, top with remaining mozzarella cheese, cover and let stand until the cheese is melted.

⏲️ Storage

To Store: Store in the refrigerator for up to a week in an airtight container. (These are my favorite airtight containers.)

To Reheat: Once thawed, reheat in the oven for 30 minutes at 350ºF.

To Freeze: Freeze for up to 3 months in an airtight container.

To Thaw: Thaw overnight in the refrigerator.
