    Why wait for an ice cream truck when you could make this homemade strawberry shortcake ice cream recipe right at home?

    At the first sign of the sunny warm weather, it's time to break out the ice cream machine!

    This creamy, refreshing ice cream is a tasty way to cool off (although I love this any time of year) Using fresh fruit in ice cream makes a big difference in the taste (check out our homemade strawberry ice cream recipe), but you can use frozen strawberries as well.

    I can't decide if I love the creamy texture of this homemade ice cream or the strawberry flavor best. Once you try this strawberry shortcake ice cream recipe, you'll be hooked, too!

    🧂 Ingredients

    You only need a few simple ingredients to make our Strawberry Shortcake Ice Cream recipe:

    • whole milk
    • heavy whipping cream or heavy cream
    • vanilla extract
    • salt
    • granulated sugar
    • angel food cake
    • fresh strawberries

    🔪 Instructions

    This recipe makes about 1 quart of ice cream.

    Ice Cream Base

    1. In a heavy bottom medium saucepan, combine the ingredients for the ice cream base. Cook for 3-5 minutes on medium heat, stirring constantly until the sugar dissolves.
    2. Remove from the heat and transfer to a bowl.
    3. Once the milk mixture has cooled, place plastic wrap onto it so that it lightly touches the liquid (to keep a skin from forming).
    4. Refrigerate the mixture for 2 hours, up to overnight.

    Strawberry Swirl

    1. Place strawberries and sugar in a saucepan over medium heat. Bring the mixture to a boil.
    2. While the strawberry mixture cooks, use a potato masher or fork to smush the strawberries. Once the mixture has thickened (about 10 minutes), remove it from the heat and let cool completely.
    3. Place the strawberries in an airtight container and place in the fridge for 2 hours, up to overnight.

    Angel Food Cake

    1. Preheat the oven to 275F-degrees.
    2. Line a baking sheet with parchment paper.
    3. Cut the angel food cake into bite-size cubes.
    4. Place the angel food cake cubes onto the prepared tray in an even layer.
    5. Cook for 30 minutes until the pieces are toasted.
    6. Cool completely.

    Making the Ice Cream

    1. Pour the ice cream base into the ice cream maker and follow the manufacturer's instructions.
    2. Remove from the ice cream machine and place one-third of the ice cream into an ice cream container or bread pan.
    3. Spoon one-third of the strawberries and angel food cake cubes on top. Use a knife to gently swirl it together.
    4. Repeat until the container is full.
    5. Freeze for 4-6 hours until solid.

    📖 Variations

    The first time you try any new recipe we recommend that you make it just as it is written on the recipe card since that is how the recipe has been tested. However, the next time you make our recipe, you might want to try one of these ideas:

    Instead of angel food cake, you could use pound cake, crumbled shortbread cookies, crushed golden oreos, or crumbled graham crackers.

    For a little extra decadence, sprinkle mini chocolate chips or white chocolate chips throughout.

    Serving Suggestions

    Be sure to add a dollop of whipped cream for the nostalgia of childhood! You could even add freeze-dried strawberries on top.
