Ang’s Recipe Tips

✔️ Make sure to drain the corn and beans well. You can also cook uncovered for the last 20–30 minutes to let some liquid evaporate.

✔️ Cut the cream cheese into cubes to help it soften quickly. This will also help it melt into the chicken better.

✔️ Use larger pieces and check for doneness around the 3.5–4 hour mark if cooking on high. Chicken thighs also tend to stay more moist.

How to Serve Fiesta Chicken

This is the fun part! This recipe is so versatile:

  • Tuck into tortillas for tacos or burritos
  • Pile on top of rice or cauliflower rice bowls

  • Place the chicken in the slow cooker, then add all the ingredients except the limes and cream cheese.
    2 lbs boneless skinless chicken breasts, 1 store-bought or Homemade Ranch Seasoning Mix, 2 tablespoon store-bought or homemade taco seasoning, 1 15-ounce can black beans, 1 8-ounce can rotel diced tomatoes and green chilies, 1 15-ounce can corn
  • Cover and cook on high for 3–4 hours or on low for 6–8 hours, until the chicken is tender.
  • Shred the chicken right in the slow cooker.
  • Add a squeeze of fresh lime juice, stir in the cream cheese, and mix until well combined.

  • Let it cook for another 30–60 minutes, stirring occasionally, until the cream cheese is fully melted and the sauce is creamy.
