🔪 Instructions
- Preheat your oven to 350F degrees.
- Spray a 12-cup bundt pan using nonstick cooking spray.
- Mix the dry ingredients in a medium bowl. Set aside.
- In another large bowl, beat the butter and sugar on high for about 1-2 minutes until light and fluffy; then add the eggs one at a time.
- Add the cooked and mashed sweet potato and vanilla extract; mix well.
- Add the flour mixture a little at a time to the wet ingredients until combined.
- Pour batter into the prepared bundt pan.
- Bake for 45-50 minutes in the preheated oven or until a knife or skewer comes out clean from the center of the cake.
- Allow the cake to cool for about 10 minutes, then remove it from the pan and place it on a serving plate or wire rack.
For the Maple Icing
- In a small bowl, combine the cream cheese, powdered sugar, and maple syrup.
- Mix together on medium speed using an electric mixer and add milk or heavy cream until it reaches it becomes a thick glaze.
- Once the cake has cooled completely, spoon or pour over the top of the cake.

✔️ The fastest way to cook sweet potatoes is in the microwave. Use a fork to prick a few holes in the sweet potatoes and microwave for 5 minutes. Check them, turn them, and microwave for an additional 5 minutes or as needed. You can then easily scoop out the flesh and mash it.
✔️ Start with all your ingredients at room temperature for best results.
✔️ Be sure to grease your bundt pan really well. The more nooks and crannies, the more places the cake can get stuck in the pan.

To Store: Leftover pound cake should be stored in an airtight container. It can be kept at room temperature or in the fridge. (These are my favorite airtight containers.)

- 1 cup sifted confectioners’ sugar
- 2 tablespoons maple syrup
- 2-4 tablespoons heavy cream or milk
- 2 tablespoons cream cheese

To make the cake:
