Peanut Butter Cup Cookie Bars

If you love peanut butter cups, you have to make a double batch of these delicious cookie bars topped with your favorite treat.

If you love chocolate and peanut butter, you’ll love these mouth watering peanut butter cup cookie bars!  The dark chocolate and peanut butter cup topping is the perfect compliment to the almost gooey chewy peanut butter cookie bar base.  
 
Peanut butter and chocolate is my absolute favorite combination for sweets (case in point, these delicious peanut butter pretzel bites). I love the sweet, nutty and slightly salty duo.  This recipe starts with a cookie dough mix, but don’t be fooled into thinking this is just a boring recipe.  The dark chocolate and peanut butter cup topping is the perfect compliment to the almost gooey chewy peanut butter cookie bar base.  
 
These bars didn’t last long in our house – Mr. Juggling Act and the kiddos were big fans of these, just like me.  Give them a try and I bet you’ll be sold, too!



Peanut Butter Cup Cookie Bars

Here’s how to make these delicious semi-homemade peanut butter cup cookie bars! Adapted from here.

Ingredients:
1 pound (1lb 1.5oz) Betty Crocker peanut butter cookie mix
3 tablespoons vegetable oil
1 tablespoon water
1 egg
2 cups ChocoMaker Dark Chocolate
2 cups peanut butter cups, chopped

Directions:
Preheat the oven to 350-degrees. Prepare a 13×9-inch pan by coating with a light mist of cooking spray.

Combine the cookie mix, oil, water, and egg in a large mixing bowl, until well mixed. Press the dough into the pan and bake for 15-18 minutes until the edges are golden brown.  Cool completely.

I’m in love with the ChocoMaker brand dark chocolate wafers.  They melt beautifully and the taste is rich and chocolaty.

Add the wafers to a microwave safe bowl, and heat in 30-second intervals, stirring in between.  Once the chocolate is smooth, spread it over the cookie bars.  Sprinkle with the chopped peanut butter cups.

Refrigerate 30-minutes until set – this is the hardest part!  Cut into bars (the chocolate may crack, but that’s ok) and serve. Store leftovers in the refrigerator – if there are any!

  1. Peanut butter bars will never last in our house either. My husband will be in love with these. Love the chunky peanut butter cups on top.
