Oven Roasted Beets Recipe

This simple oven roasted beets recipe is as delicious as it is easy! Roasting brings out the sweetness in these earthy root veggies.

Growing up, my grandfather grew beets in his garden and we always had them as a side dish. (My grandfather also used the beet greens to make soup.)

Nowadays, I prefer to serve roasted beets, which are so delicious! Plus, you don’t have to spend forever peeling the beets – just let the oven do the work for you!

We’ll show you how to roast beets in the oven, which makes them sweeter.

Ingredients

You only need a few simple ingredients to make this delicious recipe:

  • fresh beets
  • olive oil
  • onion (optional)
  • fresh herbs such as thyme or rosemary (optional)
  • salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Wash beets under cold water and cut off the top and bottom. 
  3. Cut beets in half and toss with olive oil, salt, and pepper.
  4. Lay out a large piece of tinfoil.
  5. Wrap and seal the beets, onion pieces, and fresh herbs. (Or place beets in a greased baking dish and cover). 
  6. Roast the foil package for 1 hour or until beets are tender when poked with a fork.
  7. Using rubber gloves or paper towels, rub the beets and the skins will just slide right off.

Tips

Here’s how to prepare your beets for roasting:

  • Scrub beets to remove any dirt/debris.
  • Trim off the tops and bottoms.

Storage

Store: Once roasted, leftover beets will keep refrigerated for up to a week. (These are my favorite airtight containers.)

Reheat: Microwave individual servings in 30-second increments.

Serving Suggestions

Serve with butter, salt, and pepper, if desired. You could also serve them with compound butter like garlic chive butter, steak house butter, or cowboy butter.
