This might just be the best summer ever because I've found my mom tribe. You know the mom's that you love being around because they just get you? The moms that don't judge your parenting skills or care that your hair is dirty. Those are your people, and I have found my people. Well, with one exception.
My mom tribe is full of coffee drinkers. I'm a fan of coffee flavored ice cream and drinks, but not strong coffee. So when I hosted my pals for a playdate for the kids and some adult time for us moms, I made a Cookies and Cream Coffee Frappe for everyone.

The secret to making delicious frozen coffee drinks is freezing the coffee instead of using ice cubes, which will water down your drink as they melt. I love using oversized ice cube trays for this. Just use your favorite coffee. For this recipe I used a basic dark roast, but you could use a flavored coffee, as well.
You don't need to add any extra sugar, since you'll get some sweetness from the creamer and the chocolate sandwich cookies, so essentially, this is a three-ingredient recipe! Of course, you'll want to top it with a little extra deliciousness and that's where the whipped cream comes into play. Besides, what's a coffeehouse copycat drink without a dollop of whipped cream on top?!?

Here's how to make this luscious Cookies and Cream Coffee Frappe:
Makes 3-4
Ingredients:
- brewed coffee, cooled
- French Vanilla Coffee Creamer
- chocolate sandwich cookies
Toppings: whipped cream, crushed 2 crushed sandwich cookies, for garnish
Directions:
- Pour the cooled coffee into an ice cube tray and freeze until solid.
- Put 2 chocolate sandwich cookies into a sandwich bag and crush.
- Remove the coffee ice cubes from the tray and add to a blender.
- Pour the French Vanilla Coffee Creamer into the blender and add the cookies.
- Pulse to break up the coffee ice cubes, then blend until somewhat smooth.
Looks pretty delicious, doesn't it? Trust me, it's incredible! You can make a caffeine-free version with the kids using coffee ice cream also, just blend together two cups of coffee ice cream with one cup of creamer and 4 chocolate sandwich cookies.
