At our house, once school starts again, every evening is a blur of activity from homework to sports and trying to squeeze in a decent meal. That’s why I love using my crock pot to get yummy and healthy meals without having to slave over the stove. 

The other thing I love is takeout, but let’s face it, we can’t have takeout every night of the week. So that’s where my Slow-Cooker Beef and Broccoli recipe comes in. It’s so flavorful and perfect for a quick meal.

You only need a handful of simple ingredients which makes it perfect for busy weeknights.

Stew beef is perfect for recipes that cook low and slow, and I highly recommend it for slow cooking recipes. (Another great recipe to make with stew meat is Beef Tips and Gravy.)

Ingredients

Here is what you will need to make this easy recipe:

  • Stew Beef: Slow cooking is ideal for stew beef as it is tough. You can also use a pound of flank steak or sirloin steak and cut across the grain into thin slices.
  • Beef Broth: This will form the base of the sauce. You can substitute beef stock.
  • Sesame Oil: Using sesame oil will impart a sesame flavor, however, you can substitute canola or sunflower oil if you prefer.
  • Broccoli: Use either fresh or frozen broccoli, cut into bite-size pieces.
  • Rice or Noodles: White or brown rice or noodles for serving
  • Brown Sugar: Light or dark brown sugar both work.
  • Garlic: Use fresh garlic, finely minced, for the best flavor.
  • Soy Sauce: Adds both saltiness and umami to the sauce. You can also use low-sodium soy sauce.
  • Corn Starch: Thickens the sauce to give it more body.

Variations

For a little heat, add red pepper flakes to the sauce mixture.

If you like sesame seeds, sprinkle those right on top just before you’re ready to eat. You can also garnish the meal with sliced scallions or green onions.

To Make Gluten Free:

Use a gluten-free soy sauce and serve over a bed of cauliflower rice.

    Storage & Reheating

    Store leftovers in an airtight container. It will last 3-5 days.

    Ingredients

    • 1 lb stew beef
    • 1 cup beef stock
    • 1/3 cup soy sauce
    • 1 teaspoon sesame oil
    • cup brown sugar
    • 3 cloves garlic minced
    • 2 tablespoons cornstarch
    • Frozen broccoli florets about 3 cups
    • salt and pepper, to taste

    Instructions

    • In a mixing bowl, whisk together the beef stock, sesame oil, soy sauce, brown sugar, and minced garlic.
      1 cup beef stock, 1/3 cup soy sauce, 1 teaspoon sesame oil, ⅓ cup brown sugar, 3 cloves garlic
    • Add the beef to the slow cooker and pour the liquid over the top, tossing the beef to coat.

    • Set the slow cooker to cook for 4 hours on HIGH heat.
    • When the meat is tender, remove a 1/4 cup of the sauce and put in into a small bowl.  Add the cornstarch to the sauce and whisk with a fork to combine. 
      2 tablespoons cornstarch
    • Slowly drizzle the cornstarch mixture to the slow cooker and stir into the sauce.
    • Add the broccoli florets to the slow cooker and cover.

    • Cook for another 30 minutes on low so the sauce will thicken and the broccoli will cook.
    • Season with salt and pepper as desired and serve over white or brown rice.

      Slow cooker meals are the best! This one is so good.
      I always use dark brown sugar because I like the taste better.
      I also add a little red pepper flake to it for some heat.

      Two of my kids are allergic to soy, so I omitted the Soy Sauce and used extra beef broth. I added some dry ginger and also some red pepper flakes. Very good!

      1. Hi Linda, you can absolutely use frozen broccoli. I’m not sure exactly how long it would take so I would add it but then check on it about 20 minutes later and adjust the time accordingly.
