This flavorful Korean beef is so easy to make! When made by slow cooking, the chuck roast or flank steak, sesame oil, rice vinegar, and red pepper flakes create tender meat and a delicious sauce that can be enjoyed as is or made into Korean tacos.

🔪 Instructions
- Spray your slow cooker with nonstick cooking spray, or place a slow cooker liner in the crockpot.
- Place all the ingredients except the sesame seeds and green onions into the slow cooker.
- Toss well to separate the beef.
- Cover and cook on high for 2-3 hours or on low for 4-6 hours
- Toss the beef and pull apart any strips of meat that are stuck together.
- Remove ¼ cup of the drippings from your slow cooker and put it in a small bowl.
- To the bowl, add the cornstarch slurry and stir to combine.
- Add the mixture back to the slow cooker and continue cooking for 30 minutes to thicken your sauce.
- Serve over rice and garnish with sesame seeds and green onion slices.

🍲 Storage
To Store: Leftover Crockpot Korean Beef should be stored in an airtight container in the refrigerator. (These are my favorite airtight containers.) It will keep for 3-5 days.
To Freeze: Place the beef into a freezer bag and label it. Store for 2-3 months.
To Thaw: Remove from the freezer and allow to thaw in the fridge overnight.
📖 Variations

- For a spicy kick, add a little sweet chili garlic sauce or red pepper flakes.

- ½ onion diced
- ½ cup brown sugar
- ¼ cup soy sauce
- 6 cloves garlic minced
- 1 teaspoon minced ginger
- 1 tablespoon rice wine vinegar
- 1 tablespoon sesame oil
- Salt and black pepper to taste
- 1 tablespoon cornstarch optional
- Sesame seeds for garnish
- Sliced green onions for garnish
