1. Italian Meatballs

This Authentic Italian meatball recipe comes straight from my husband’s Italian grandmother. They are pure comfort—made with a mix of ground beef and pork, seasoned with herbs and cheese, and baked to tender perfection.

These are the meatballs we make the most, and are what I use to make meatball sliders, meatball calzones, and meatball cupcakes.

These meatballs are super versatile and can be made with ground sausage instead of ground pork. To make them gluten-free for my sister, we make them with gluten-free breadcrumbs. To make them egg-free for my nephew with allergies, we replace the egg with apple sauce.

2. Korean Meatballs

Easy and bursting with big sweet-and-savory flavor, these Korean meatballs cook in the Instant Pot in just about 22 minutes start to finish. With pantry-friendly ingredients like Korean BBQ sauce, they’re a speedy, flavor-packed weeknight win.

These meatballs are delicious served in wraps with Asian purple cabbage slaw or on top of a bed of rice.

Tips for Making Perfect Meatballs

  • Mix proteins. Combining beef, pork, or chicken can add depth of flavor and keep meatballs juicy.
  • Use a cookie scoop for a uniform size. This keeps your meatballs the same size so they cook evenly every time. These are my favorite cookie scoops for making small, medium, and large meatballs.
  • Don’t overmix. Gently combine ingredients to keep your meatballs tender and juicy. My husband always uses his hands to combine the meatball mixture. It’s the way his grandmother taught him, and a good way to avoid overmixing.
  • Add moisture. Ingredients like eggs, milk, or grated cheese help keep meatballs soft.
  • Season well. Don’t be shy with herbs like parsley or basil, spices, and salt—this is where the flavor really shines.
  • Chill before cooking. This is optional, but refrigerating meatballs for 15–30 minutes helps them hold their shape while cooking.
  • Try different cooking methods. Bake, pan-fry, or slow-cook in sauce—each method brings out unique flavors and textures.

Tips for Freezing Meatballs

  • Cook or freeze raw—your choice! You can freeze meatballs before or after cooking. Raw meatballs are great for meal prep, while cooked ones reheat quickly for easy dinners. Personally, I like cooking them before freezing when I have the time.
  • Flash freeze first. Arrange meatballs in a single layer on a large baking sheet and freeze for 1–2 hours before transferring to a freezer-safe bag or container. This keeps them from sticking together. (Just remember to set a reminder so you don’t forget about them!)
  • Label and date. Trust me, you’ll thank yourself later! Before you put all the meatballs in your freezer bags, use a marker to note what they are and the date you froze them.
  • Use within 3 months. They’ll still be safe after that, but the texture and flavor are best if eaten sooner.
  • Reheat straight from frozen. No need to thaw—just simmer cooked meatballs in sauce on the stovetop, toss them in the crockpot, or warm in the oven until heated through. For raw frozen meatballs, bake or pan-fry straight from the freezer, adding a few extra minutes of cook time.
