Fresh salmon, especially wild salmon, has a slightly better texture and flavor, and is ideal if you’re cooking it the same day or next. Look for consistent color and avoid fillets that look dull or have dark patches. The flesh should be first and moist, it should smell clean and briny – not fishy.

  • Pat the salmon dry really well so that the glaze will stick to it. This is especially important if you’re using thawed salmon.
  • Always line your baking sheet with parchment paper or aluminum foil. Trust me, it makes clean up so much easier, and helps keep the salmon from sticking to the pan.
  • Take care not to overbake the salmon as it will dry out. Pull it from the oven when it flakes easily with a fork and reaches an internal temp of 125–130°F (it’ll keep cooking a bit as it rests).
  • Allow the salmon to rest for a couple of minutes before serving (which will also help it stay moist).

Storage

To Store: Cooked salmon should be stored in an airtight container in the fridge for up to 3 days. (These are my favorite airtight containers.)

To Reheat: You can microwave salmon, but the trick is to reheat it gently so it doesn’t get dry or rubbery. Cover it with a damp paper towel and heat on 50% power in 30-second bursts until it’s warmed through. Add a splash of broth or a drizzle of olive oil to help lock in moisture.

To reheat without drying it out, place it in a baking dish, cover with foil, and warm at 275°F for about 10–15 minutes. A splash of broth or a drizzle of olive oil helps keep it juicy.

How to Use Leftovers

Don’t let a single flake go to waste. There are lots of ways to repurpose leftover salmon. (Just make sure: it’s been stored properly (airtight container, refrigerated within two hours of cooking), and eaten within 2–3 days.)

  • Flake it into a bowl of rice with avocado, cucumber, and sesame seeds for a quick salmon rice bowl. You can also make a tasty pasta salad or grain bowl.

  • 1 tablespoon olive oil
  • ¼ cup fresh orange juice
