Forget the filet mignon! When you want a really amazing steak to wow guests, you need to try petite sirloin steak. It’s more affordable than a filet, and it’s perfect for company. 

You can use cook it on the grill or sear it in a pan with Cowboy Butter. Either way, you’re going to love it.

Today, I’m going to share with you how I make grilled petite sirloin steak with our tasty Cowboy Steak Rub, which is especially good on beef. This blend has a sweet and smoky heat that’s really delicious. 

There’s a little kick from the chili powder and cayenne pepper, and the smokiness comes from cumin, coriander, and paprika. What you might not expect is that this spice rub also includes brown sugar and coffee. It definitely packs a punch!

Petite sirloin is a smaller, leaner cut that comes from the bottom part of the sirloin—kind of like its budget-friendly little sibling. It might not be as fancy as a filet or ribeye, but don’t count it out! With our Cowboy Steak Rub, some Worcestershire sauce for a boost of umami, and a quick sear, this steak delivers big flavor without breaking the bank. It’s a great option for busy families who want something delicious and satisfying without spending a fortune at the butcher counter.

  • Whenever possible, I like to add the seasonings to the steak and allow it to marinate for 20-30 minutes, up to overnight.

  • Lightly season both sides of the steaks with salt and pepper.
  • Rub on the olive oil, Worcestershire sauce and seasoning mix. Refrigerate for at least 20-30 minutes for maximum flavor, 24 hours is best.
    2 petite sirloin steaks, 2 teaspoons Cowboy Spice Rub, 1 tablespoon olive oil, 2 tablespoons Worcestershire sauce
  • Remove the steaks from the fridge and let set out for 30 minutes before cooking and discard any leftover marinade.
  • Preaheat the grill to 400°F – or medium-high heat if you are using a grilling pan.
  • Cook for 3-5 minutes per side, depending on your "doneness" preference.
  • Use the thermometer to check the internal temperature, then remove from the heat, cover with tinfoil and let rest at least 5 minutes – however 10 minutes is best.

How long to grill steak:

This depends largely on how you like your beef cooked.
  • 4 minutes per side for medium-rare
  • 5 minutes per side for medium
  • 6 minutes for medium-well

 

What temperature does steak need to be?

For example, USDA recommends a minimum temp of steak to be 145°F and allow to rest for at least 3 minutes, which is considered “medium.” This is how Mr. Juggling Act likes his steaks. I prefer mine a little more done so I look for 155°F.
 

Steak Doneness Chart:

  • Medium Rare: 145 degrees F
  • Medium: 160 degrees F
  • Well Done: 170 degrees F

 

Recipe Variations

For the best experience, we recommend you follow the recipe since that’s how the petite steak recipe has been tested. However, if you would like, here are some ideas for making the recipe your own:
Another great rub for petite steak is our Homemade Montreal Seasoning Mix. In all honesty, these petite sirloin steaks are so good that it won’t take much for them to taste really amazing!  You’ll find that our Cowboy Butter is also truly amazing on these steaks as well.

 

How to Pan Sear Petite Sirloin

1) Start by adding the olive oil, Cowboy Steak Rub and Worcestershire on the meat. Refrigerate for at least 2 hours, for maximum flavor, 24 hours is best.
2) Remove the steaks from the fridge and let set out for 30 minutes before cooking and discard any leftover marinade.
3) Heat a cast iron skillet until it’s very hot over medium-high heat, then add 1/2 tablespoon of olive oil to the skillet.
4) Add the steaks to the skillet. In order to achieve a nice sear, do not move the steaks around. Let sear for about 4 minutes on the first side.
5) Flip the steaks and cook for an additional 4-6 minutes, depending on your desired doneness.
6) Remove to a cutting board and cover with tinfoil for 10 minutes, allowing the steaks to rest before slicing.
For best results with pan-seared steak:
    • When the second side of the steaks have cooked for 3 minutes, add 2 tablespoons of our Cowboy Butter to the skillet.
    • Once the butter is melted, slightly tilt the pan so that you can easily scoop it to spoon over the steaks.
    • Continue spooning the melted butter over the steaks for about 1 minute.

        this makes good petite sirloin. it as great as any sirloin or new York steak. pan searing with butter olive oil bit in pan produces juicier more flavorful meat than barbecue gas or coals to us .

      Petite sirloin – which is also sometimes called ball tip steak or loin ball tip steak – is usually available at your grocery store or butcher shop. Most often, the pieces usually weigh between 6oz-8oz.
