In our house, broccoli is usually only cooked one way – steamed, tossed with oil, vinegar, and Italian seasonings, and eaten cold. This is how my husband has been eating it since he was a little boy. But here’s the thing: I don’t care for vinegar, and I really don’t like my food to be cold.

When he came home the other night to see me pulling broccoli out of the oven, I was already prepared for the look of skepticism I got. I reminded him about the Loaded Cauliflower Mash, which he didn’t want to eat but gobbled up, too!

Ingredients

  • Broccoli: This recipe uses fresh broccoli. Cut into bite-sized pieces.
  • Olive Oil: Any neutral oil will work for this recipe. Be sure to toss the broccoli so that all the pieces are coated.
  • Parmesan Cheese: Use fresh parmesan cheese. Trust me. It makes a huge difference! I like to shave it using a vegetable peeler.
  • Garlic: Fresh garlic is best in this recipe.
  • Kosher Salt and Black Pepper: Don’t skip the seasoning, it really helps round out the dish and allow the garlic and parmesan to shine.

Ingredients

  • 2 Heads of Broccoli
  • 1 teaspoon Minced Garlic
  • 1/2 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 cup Olive Oil
  • 1/4 cup Parmesan cheese

Instructions

  • Preheat the oven to 400-degrees.
  • Wash and chop the broccoli and pat dry with a paper towel.

  • In a large mixing bowl, toss the broccoli with the olive oil, garlic, salt, and pepper.
    1 teaspoon Minced Garlic, 1/2 teaspoon Kosher Salt, 1/2 teaspoon Black Pepper, 1/4 cup Olive Oil
  • Spread the broccoli out onto the sheet pan. (If you like you can line the baking sheet with tinfoil (for easier cleanup!)
  • Sprinkle with Parmesan cheese.

  • Roast until golden brown around the edges and crispy, usually about 10 minutes.
