Toasted Coconut Lime Popcorn is the twist you need to get out of your snacking rut!

Barlean's challenged me to come up with a mouth-watering popcorn recipe to knock your socks off using their Organic Butter Flavored Coconut Oil. So, it's time to get popping with Barlean's and Lékué as I whip up a batch of my Toasted Coconut Lime Popcorn. The moments when Mr. Juggling Act shows how much he loves me are truly precious. They're not grand gestures, but small moments of sacrifice. Sure he works long hours and commutes 80 miles every day, but that's not what I mean. Popcorn is one of his most favorite snacks of all time. He likes it with tons of butter and heavily salted, with a pinch of sugar for a sweet and salty taste.
But when I say I'm making Toasted Coconut Lime Popcorn and he happily helps me with the recipe, I know he really loves me. Mr. Juggling Act hates coconut with a passion. Not to mention I'm messing with a sacred recipe! And when he found out I wasn't using butter, I thought for a moment he might leave me.

This recipe uses Barlean's Organic Butter Flavored Coconut Oil instead of traditional butter. It is vegan, non-GMO project verified, and cholesterol free. Plus, it's completely free of dairy, gluten, and soy, and there are no Trans Fats or Hydrogenated Fats. Yes my friends, I've managed to come up with a "healthy" popcorn loaded with flavor. Best of all, Mr. Juggling Act loves this Toasted Coconut Lime Popcorn. Seriously! He couldn't get enough of it!

The butter flavored coconut oil is great in lots of recipes in lieu of butter. Barlean's suggests you use this as a substitute 1:1 for butter in baking, cooking and frying under 375°F.
And, while refrigeration isn't required, you may want to as we head into summer if your prefer a solid consistency (Coconut oil will begin to soften and melt at 76°F.)

Ingredients
Here's how to make Toasted Coconut Lime Popcorn you won't be able to refuse!
- coconut flakes
- Butter Flavored Coconut oil
- popcorn kernels
- juice and zest of 1 lime
- salt
Instructions
- Preheat the oven to 300-degrees F. Spread the coconut onto a baking sheet in a thin layer. Toast the coconut in the oven for 5-8 minutes until golden brown. Them, remove from heat and set aside.
- Combine the coconut oil and kernels in the Lékué popper, or a large stock pot.
- For the Lékué, microwave for 2-3 minutes with the cover on.
- For stovetop, gentle shake the pot until the kernels have popped.
- Pour the popcorn into a clean paper bag and drizzle the lime juice and zest over the top of the popcorn. Add the toasted coconut, then sprinkle with salt. Close the bag and shake.
- Next, spread the mixture over the baking sheet and bake until the mixture is dry, about 5 minutes. Serve warm.
This recipe makes Approximately 6 cups of Toasted Coconut Lime Popcorn.
