Delicious Blueberry Lemon Waffles

So waffles are my jam. Seriously, it is something I could eat every other day of the week. I love all of the combinations you can add to waffles. We love these glazed waffles for holidays, but a protein-packed waffle full of delicious blueberry flavor, this is the recipe you need!
For this round of waffles, I decided to make them blueberry and lemon flavored. I knew how much you loved these Blueberry Mousse Puff Pastry Cups so I figured I would stick with a flavor that I knew you would enjoy! Although I think adding chocolate chips would be a good idea as well!
Ingredients
- sprouted wheat flour – I made these waffles with sprouted flour because it reminds me of whole grain flour, but it leaves my waffles fluffy and light. However, you can use all-purpose flour if that’s what you have on hand.
- egg
- milk – it should be room temperature or slightly warmer, but not hot.
- lemon juice and zest
- blueberry Greek yogurt
- blueberries – for this recipe, fresh berries are best.
From the pantry: salt, baking powder, oil.
Recipe Variations
- Substitute the blueberries for whole blackberries or raspberries, or chopped strawberries.
- If you prefer, use all-purpose or whole wheat flour instead of sprouted flour.

Blueberry Waffles

Ingredients
- 1½ cups sprouted wheat flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ teaspoon salt
- 1 egg
- 1¼ cups lukewarm milk
- 1/4 cup lemon juice
- 2 tablespoons oil
- 1 5.3 oz. cup Blueberry Greek yogurt
- 1/4 cup blueberries
- lemon zest
Instructions
- Preheat waffle iron according to directions.
- Mix flour, baking powder, salt and sugar in mixing bowl. Set aside.1½ cups sprouted wheat flour, 2 teaspoons baking powder, ½ teaspoon salt, ½ teaspoon salt
- Mix egg, milk, lemon zest and juice and oil in small bowl.1 egg, 1¼ cups lukewarm milk, 1/4 cup lemon juice, 2 tablespoons oil, lemon zest
- Add to dry ingredients and stir.
- Stir in yogurt and blueberries.1 5.3 oz. cup Blueberry Greek yogurt, 1/4 cup blueberries
- Rest for 10 minutes.
- Spray the iron with non-stick cooking spray, then pour the amount of batter recommended by the manufacturer onto the center of the iron.
- Close the lid of the iron and bake for 3-5 minutes or until the waffle is golden brown.
