Blueberry Waffles

Amazing Blueberry Waffles with a hint of lemon are delicious for breakfast or brunch - or even breakfast for dinner!

Ingredients

  • cups sprouted wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon salt
  • 1 egg
  • cups lukewarm milk
  • 1/4 cup lemon juice
  • 2 tablespoons oil
  • 1 5.3 oz. cup Blueberry Greek yogurt
  • 1/4 cup blueberries
  • lemon zest

Instructions

  • Preheat waffle iron according to directions.
  • Mix flour, baking powder, salt and sugar in mixing bowl. Set aside.
    1½ cups sprouted wheat flour, 2 teaspoons baking powder, ½ teaspoon salt, ½ teaspoon salt
  • Mix egg, milk, lemon zest and juice and oil in small bowl.
    1 egg, 1¼ cups lukewarm milk, 1/4 cup lemon juice, 2 tablespoons oil, lemon zest
  • Add to dry ingredients and stir.
  • Stir in yogurt and blueberries.
    1 5.3 oz. cup Blueberry Greek yogurt, 1/4 cup blueberries
  • Rest for 10 minutes.
  • Spray the iron with non-stick cooking spray, then pour the amount of batter recommended by the manufacturer onto the center of the iron.
  • Close the lid of the iron and bake for 3-5 minutes or until the waffle is golden brown.
