Why You’ll Love My Recipe

Because this recipe uses leftover crockpot BBQ chicken, it’s a quick and easy recipe, budget-friendly, and so yummy your crew will gobble it right up!

  • Ready in less than 30 minutes
  • Weeknight-friendly recipe with simple ingredients
  • Fun to make with the kids (and easily customized so it’s kid-approved)

Let’s make leftover magic! If you’ve got leftover chicken and a craving for something delicious, you’re going to love this BBQ Chicken Flatbread – it’s similar to BBQ chicken pizza. I know you don’t have time on a busy weeknight to mess with fussy meals. This one is super simple and family-approved.

With just a few ingredients and almost no prep, you’ll have dinner (or a snack board centerpiece) ready in no time. It’s one of those back-pocket recipes you’ll come back to again and again.

Ingredients

This is just a quick overview of the ingredients. Scroll down to the recipe card for the printable recipe with all the details and instructions for how to make BBQ chicken flatbread.

  • Chicken: For this recipe, you can use shredded chicken or pulled chicken or store-bought rotisserie chicken, but my favorite is crockpot BBQ chicken because it’s infused with all that barbecue sauce goodness! If you don’t have pre-cooked chicken, don’t worry! You can cook up a 1/2 a pound of boneless skinless chicken breasts or thighs and toss it with a little barbecue sauce.
  • Flatbread: I sometimes use Naan bread, but I really love Stonefire Artisan Flatbread for this recipe. (Not an ad, it just holds up well and tastes good!) If you don’t have any flatbread for the crust, try making this pizza recipe with the kiddos on English muffins, pita bread, or French bread instead.
  • Barbecue Sauce: Choose your favorite BBQ sauce. I like one that’s a little sweeter, but my husband prefers smoky BBQ sauce.
  • Cheese: Mozzarella cheese, Monterey Jack, or a pizza blend of cheeses are great for this recipe. I also like the contrast of sharp cheddar with the tangy BBQ sauce, so I often use a little bit of that as well.
  • Red Onion: Thinly slice your onions (or leave them off if you’re family isn’t into it).
  • Seasonings: Garlic powder and smoked paprika add a little extra flavor. Feel free to experiment with other seasonings like onion powder or dried oregano.

Optional:

  • Fresh herbs like chopped cilantro, parsley, or (my favorite) chives.
  • Additional veggies, such as crumbled crispy bacon, chopped bell pepper, or thin slices of jalapeño, for an extra kick.
Step-by-step images show making BBQ chicken flatbread: spreading BBQ sauce, adding shredded cheese, topping with BBQ chicken, and baking until melted and crisp, then garnishing with chopped basil.

Ang’s Recipe Tips

  • Freshly grated cheese always melts better than the pre-shredded packaged cheese, but there’s zero judgment coming from me either way, because I know how busy weeknights can be!
  • Line your baking sheet with parchment paper. It makes clean up super simple.

Storage

To Store: Leftover flatbread should be stored in an airtight container in the fridge. It will keep for up to 4-5 days. (These are my favorite airtight containers.)

To Reheat: My husband likes to eat this cold right from the fridge, but I microwave a slice or two in 30-second intervals until it’s heated throughout.

Serving Suggestions

For a stress-free meal, I like to serve this flatbread pizza with a simple salad or a fresh cabbage slaw. If you’re going for a pizza night theme, serve your pizza with garlic knots. Here are a few other side salads my family loves:

Italian Green Bean Salad
20 minutes
Honey Lime Fruit Salad
10 minutes
Wild Rice Salad
10 minutes
Apple Feta Salad
10 minutes

🏈 If you’re serving this flatbread as part of a game day spread, it goes great with pepperoni pizza sliders, teriyaki chicken wings, and even ham and cheese croissants.
