Okay, so much I'm exaggerating, but you are going to just love this easy granola bar recipe. They're quick, delicious, and totally kid-friendly!
I particularly love this recipe because they include heart-healthy almonds, which I adore. Almonds are a great source of vitamins, minerals, and protein so they're a great addition to granola bars. However, if you prefer, you could substitute the almonds for walnuts, pecans, or even macadamia nuts.

🔪Instructions
This recipe makes 10-12 bars and I usually double it.
- Line an 8”x8” baking pan with parchment paper.
- Add oats, peanut butter, honey, and vanilla to a large bowl and stir
- Add chocolate chips, almonds, and coconut.
- Dump the mixture into a baking pan, and press down firmly.
- Freeze.
- Remove from the freezer, and lift the parchment paper out of the baking pan, and place your sheet of bars on a cutting board.
- Cut into bars.

- 1 ½ cup quick oats
- ½ cup creamy peanut butter
- ¼ cup honey
- 1 teaspoon vanilla extract
- ½ cup mini chocolate chips
- ½ cup sliced almonds
- ½ cup coconut flakes
Instructions
- Line a 8”x8” baking pan with parchment paper.
- Add oats, peanut butter, honey, and vanilla to a large bowl and stir until fully combined.
- Add chocolate chips, almonds, and coconut. Stir until combined.
- Dump the mixture into a baking pan, and press down firmly to make a flat layer.
- Freeze for 2 hours.
- Remove from the freezer, and lift the parchment paper out of the baking pan, and place your sheet of bars on a cutting board.
- Cut the bars down the center, then cut the opposite way, into about 1 inch bars.
