Spice Cupcakes with Cream Cheese Frosting and Maple Drizzle – how awesome does that sound? Spice cake is my very favorite and these are just sooo good – and pretty, too. (If I do say so myself!)

While the cupcakes bake, whip up a batch of my Best Cream Cheese Frosting Recipe.

Ingredients

Cupcakes

  • spice cake mix
  • vanilla instant pudding mix
  • applesauce
  • vegetable oil
  • water
  • eggs
  • ground cinnamon
  • Cream Cheese Frosting

Maple Drizzle

  • maple syrup
  • optional

Cupcakes

  1. Preheat oven to 350-degrees Line muffin cups with papers and set aside.
  2. In a large mixing bowl, combine the cake mix, pudding mix, applesauce, oil, water, eggs, and cinnamon. Beat well – the batter will look thick.
  3. Use an ice cream scoop, or Large Cookie Scoop to fill each well in the cupcake pan.
  4. Bake for 18-20 minutes on the center rack until a toothpick inserted in the center comes out clean. Allow the cupcakes to cool for 10 minutes before removing from the pan. Cool completely before frosting.
  5. Once the cupcakes are cooled, frost with cream cheese icing.

Drizzle

  • Using a fork, drizzle a little of the maple syrup over the frosting.
  • Decorate with a pecan on top, if desired.
