Ingredients

  • 1 pound ground Italian sausage hot or mild sausage
  • 1 red pepper sliced
  • 1 yellow pepper sliced
  • 1 green pepper sliced
  • 1 zucchini sliced
  • 10 ounces grape or cherry tomatoes
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon red pepper flakes
  • ½ teaspoon Kosher salt
  • ½ teaspoon freshly cracked black pepper
  • 1 16-ounce package potato gnocchi
  • Fresh basil leaves thinly sliced

Instructions

  • Preheat the oven to 425F.
  • Add all of the ingredients except for the gnocchi to a large baking sheet. (Break up the ground sausage into small pieces).
    1 pound ground Italian sausage, 1 red pepper, 1 yellow pepper, 1 green pepper, 1 zucchini, 10 ounces grape or cherry tomatoes, 1 tablespoon extra virgin olive oil, 1 teaspoon Italian seasoning, 1 teaspoon garlic powder, ½ teaspoon red pepper flakes, ½ teaspoon Kosher salt, ½ teaspoon freshly cracked black pepper
  • Toss to coat and evenly distribute the seasonings.
  • Bake for 20-25 minutes until the sausage is cooked and the vegetables are tender.
  • Cook the gnocchi according to the instructions on the package.
    1 16-ounce package potato gnocchi
  • Place the gnocchi onto the baking sheet with the sausage and vegetables.
  • Turn on the broiler.
  • Place the sheet pan under the broiler for 3-5 minutes until the gnocchi is golden brown.
  • Serve with fresh basil.
