Sausage and Cheese Breakfast Egg Muffins

Make a big batch of these high=protein Sausage and Cheese Breakfast Egg Muffins for busy school mornings. They're perfect for brunch, too.

Ingredients

  • 6 Eggs beaten
  • ½ lb Sausage meat
  • 1 cup Cheddar shredded
  • ½ Yellow or any color you have on hand Sweet Pepper, diced
  • ¼ cup Onion diced
  • 1 teaspoon Garlic powder
  • 1 teaspoon Seasoned Salt
  • ½ teaspoon Pepper ground

Instructions

  • Preheat oven to 350
  • Combine sausage meat, sweet pepper and onion in a fry pan. Fry together until the sausage is cooked throughout, and the onion is translucent. Set aside to cool slightly.
  • In a bowl, combine the cheese, eggs and spices until mixed well. Add the sausage mixture and further combine until full incorporated.
  • Fill the cups of a LIBERALLY greased muffin tin, approximately 2/3 full. Bake for 30-35 minutes.

Notes

These freeze very well and are excellent reheated for busy mornings.
