Chicken and Potatoes | One Pan Dinner

One pan, zero fuss—this hearty family dinner is perfect for nights when time’s tight and tummies are hungry. Quick, budget-friendly, and kid-approved!

Ingredients

  • Boneless Skinless Chicken Thighs
  • Purple Potatoes
  • Tomatoes
  • Corn off the cob
  • Extra Virgin Olive Oil
  • Minced Garlic
  • Salt + Pepper

Instructions

  • Preheat your oven to 425 degrees
  • Place aluminum foil on top of a rimmed baking sheet
  • Cut purple potatoes, tomatoes and corn off the cob and spread out on baking sheet
  • Place chicken thighs on baking sheet
  • Drizzle extra virgin olive oil over everything on sheet
  • Spread garlic on top and sprinkle with salt and pepper
  • Bake for 20 minutes or until chicken is cooked

Notes

The bag of purple potatoes I got from the food store also had other potatoes mixed in with it, pictured above you can see both kinds of potatoes
