Asian-Inspired Pork Kabobs

Ingredients

  • 1 lb pork tenderloin cut into 1-inch pieces
  • 1 orange bell pepper cut into pieces
  • 1 pint grape tomatoes
  • 1 red onion cut into wedges
  • 1 pineapple cut into 1-inch pieces

Marinade

  • 1/4 cup soy sauce
  • 1/4 cup hoisin sauce
  • 1 teaspoon chili paste
  • 2 cloves garlic minced
  • 1 teaspoon minced fresh ginger

Instructions

  • In a large bowl, whisk together soy sauce, hoisin sauce, chili paste, garlic, and ginger in a small bowl. Reserve 1/2 of the marinade in another bowl and set aside.

  • Add the pieces of pork into the large bowl with the marinade. Cover and set in the fridge to marinate for 60 minutes, up to overnight.
    (The longer it marinates, the more flavorful it will be.)
    1 lb pork tenderloin
  • When you're ready to cook, preheat the grill to medium heat.
  • Thread pork, bell pepper, onion and pineapple pieces onto skewers. Discard any leftover marinade from the pork.
    1 orange bell pepper, 1 pint grape tomatoes, 1 red onion , 1 pineapple
  • Place skewers on the grill.
  • Grill for 2-3 minutes per side, brushing with the reserved marinade and turning over as needed until the pork is cooked through and the pineapple, peppers, and onions are lightly charred.
  • **If using bamboo skewers, soak in water for 30 minutes before using.
