Buttermilk Substitute
If you do not have buttermilk on hand, you can make your own buttermilk substitute. Choose which method is right for you, then mix it all together in a large measuring cup.
  • 2 cups buttermilk = 2 cups plain yogurt
  • 2 cups buttermilk = 1½ cups sour cream + ½ cup water or milk
  • 2 cups buttermilk = 2 cups milk + 2 tablespoons lemon juice
  • 2 cups buttermilk = 2 cups milk + 2 tablespoons distilled white vinegar
Ang's Recipe Tips
✔️I’ve used canola oil for these waffles instead of butter, which I tend to find yields a crispy churro waffles.
✔️If you’re cooking a big batch of these waffles, a good way to prevent those already made from becoming soggy is to lay them on a baking sheet.
✔️ While you want a smooth waffle batter, make sure that you don’t over-mix it, otherwise you can end up with dense and heavy waffles instead of light, fluffy, and crispy waffles due to gluten development!
