Ingredients

  • 1 ½ cups milk
  • 3 eggs
  • ½ cup pure maple syrup OR brown sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 3 cups rolled oats
  • 1/4 cup protein powder (optional)
  • 1/4 cup walnuts chopped fine (optional)
  • 1 teaspoon baking powder
  • 1 cup fresh berries (topping)

Instructions

  • In a bowl beat the milk and eggs until incorporated.

  • Pour the maple syrup, vanilla extract, and cinnamon and whisk to incorporate.

  • Add the oats and baking powder (plus walnuts and protein powder, if using) and continue mixing until everything is well incorporated.

  • Transfer the mixture to a buttered casserole dish (9x13) and top with fresh fruit if desired.

  • Let the batter rest for around 30 minutes.
  • Preheat the oven to 350 degrees. Lightly flour a baking pan.
  • Bake for 45 minutes or until done.
  • Let it cool for 10 minutes before slicing.
