Cheesy Hamburger Casserole

With lots of cheese, seasoned ground beef, al dente pasta, and tomato goodness, this is a yummy and quick weeknight dinner option the whole family will love.

Ingredients

  • 1 lb elbow pasta
  • 1 lb lean ground beef
  • 1 small yellow onion
  • 2 cloves fresh garlic
  • 2 teaspoons Worcestershire sauce
  • 1 10.5 ounce can tomato soup
  • 2 cups beef broth or stock
  • 4 ounces cream cheese room temperature
  • ½ cup whole milk
  • cups shredded cheddar cheese divided
  • salt and black pepper to taste
  • parsley optional

Instructions

  • In a large frying pan over medium-high heat, cook the diced onions and ground beef.

  • Add the garlic and cook for 1-2 minutes until fragrant.

  • Drain excess grease from the beef.
  • Add the beef stock (or broth), along with the tomato soup and Worcestershire sauce. Season with salt and pepper.

  • Cook the pasta according to the instructions on the box.

  • Combine the cooked pasta with the ground beef mixture.
  • Stir in the milk and room temperature cream cheese.
    ½ cup whole milk, 4 ounces cream cheese
  • Add half of the shredded cheese.
    3½ cups shredded cheddar cheese
  • Reduce the heat to medium and allow the casserole to simmer for a couple of minutes.
  • Transfer the pasta and hamburger mixture to a casserole dish.
  • Top with the remaining cheese and bake for 10 minutes until the cheese is melted and the casserole is bubbly.

  • Sprinkle with chopped parsley or diced green onions before serving, if desired.
