Ingredients

  • 6 oz stuffing mix (about 3-4 cups)
  • cups chicken broth or hot water
  • 2 cups diced cooked chicken leftover chicken, rotisserie chicken, or shredded chicken all work also
  • 10 oz cream of chicken soup OR cream soup substitute
  • cup sour cream
  • cups frozen mixed veggies such as corn, carrots, and peas
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Preheat the oven to 400-degrees F.
  • Lightly grease a 9x13 baking dish (or use cooking spray).
  • In a large bowl, mix together the cream soup, sour cream, seasonings, mixed vegetables, and chicken.
    2 cups diced cooked chicken, 10 oz cream of chicken soup, ⅓ cup sour cream, 2½ cups frozen mixed veggies, 1 teaspoon garlic powder, ½ teaspoon salt, ½ teaspoon black pepper
  • Spoon the chicken and soup mixture into the greased casserole dish.
  • Mix together the stuffing and hot water (or chicken stock).
    6 oz stuffing mix, 1½ cups chicken broth or hot water
  • Spoon the stuffing mixture on top of the creamy chicken filling.
  • Bake 25-30 minutes until the stuffing is crispy and the chicken mixture is bubbly.
