6 oz stuffing mix (about 3-4 cups) 1½ cups chicken broth or hot water 2 cups diced cooked chicken leftover chicken, rotisserie chicken, or shredded chicken all work also 10 oz cream of chicken soup OR cream soup substitute ⅓ cup sour cream 2½ cups frozen mixed veggies such as corn, carrots, and peas 1 teaspoon garlic powder ½ teaspoon salt ½ teaspoon black pepper
Preheat the oven to 400-degrees F.
Lightly grease a 9x13 baking dish (or use cooking spray).
In a large bowl, mix together the cream soup, sour cream, seasonings, mixed vegetables, and chicken.
2 cups diced cooked chicken, 10 oz cream of chicken soup, ⅓ cup sour cream, 2½ cups frozen mixed veggies, 1 teaspoon garlic powder, ½ teaspoon salt, ½ teaspoon black pepper
Spoon the chicken and soup mixture into the greased casserole dish.
Mix together the stuffing and hot water (or chicken stock).

Spoon the stuffing mixture on top of the creamy chicken filling.
Bake 25-30 minutes until the stuffing is crispy and the chicken mixture is bubbly.
