Crispy Fingerling Potatoes

Tender fluffy inside, and golden brown on the outside, these crispy fingerling potatoes are a simple but flavorful side dish.

Ingredients

  • 1-½ lbs fingerling potatoes
  • 3 tablespoons Cowboy Butter melted
  • 2 tablespoons olive oil
  • salt and black pepper

Instructions

  • Preheat the oven to 400-degrees F
  • Lightly grease a rimmed baking sheet.
  • Cut the fingerling potatoes in in half lengthwise.
  • Melt the butter in a microwave-safe bowl.
  • Toss the potatoes in the butter with olive oil.
  • Add the potatoes to the baking sheet.
  • Roast for 25-30 minutes, turning the potatoes half way through, until the potatoes are fork tender and golden brown.
  • Season with salt and pepper and serve hot.

Notes

⏲️ Storage
Store leftover potatoes in an air tight container in the refrigerator for about 5 days. (These are my favorite airtight containers.)
You can reheat them in the microwave, but for best results, place them on a sheet pan in the oven set to 200-degrees F until they're heated through. This way they will stay crispy.
