In a large pot or dutch oven over medium high heat add oil and onions.
2 tablespoons olive oil, ½ cup yellow onion
Cook for about 5 minutes or until onions are tender, then add the garlic and cook 1-2 minutes.
3 cloves garlic
Add in tomato sauce, chicken broth, and seasonings. Stir to combine.
1 15 oz can tomato sauce, 2 cups chicken broth, 1 teaspoon cumin, 1 tablespoon chili powder, ½ teaspoon cayenne pepper, ½ teaspoon oregano, Salt and pepper to taste
Mix in the beans and turkey.
1 pound leftover turkey, 1 15oz can kidney beans, drained, 1 15oz can black beans, drained
Bring to a boil and then reduce heat to a simmer for 30-45 minutes
Adjust seasonings as necessary.
