Leftover Turkey Chili Recipe

Ingredients

  • 2 tablespoons olive oil
  • 1 pound leftover turkey
  • ½ cup yellow onion chopped
  • 3 cloves garlic minced (approx. 1 tablespoon)
  • 1 15 oz can tomato sauce
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 tablespoon chili powder
  • ½ teaspoon cayenne pepper
  • ½ teaspoon oregano
  • Salt and pepper to taste
  • 1 15oz can black beans, drained
  • 1 15oz can kidney beans, drained

Instructions

  • In a large pot or dutch oven over medium high heat add oil and onions.

  • Cook for about 5 minutes or until onions are tender, then add the garlic and cook 1-2 minutes.

  • Add in tomato sauce, chicken broth, and seasonings. Stir to combine.
    1 15 oz can tomato sauce, 2 cups chicken broth, 1 teaspoon cumin, 1 tablespoon chili powder, ½ teaspoon cayenne pepper, ½ teaspoon oregano, Salt and pepper to taste
  • Mix in the beans and turkey.
    1 pound leftover turkey, 1 15oz can kidney beans, drained, 1 15oz can black beans, drained
  • Bring to a boil and then reduce heat to a simmer for 30-45 minutes
  • Adjust seasonings as necessary.
