- 4 medium-large sweet potatoes or about 4 cups diced
- ¼ cup olive oil
- ¼ cup maple syrup
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
Preheat your oven to 400 degrees F and lightly spray a baking sheet with olive oil or your preferred non-stick cooking spray.
Rinse, peel, and dice your sweet potatoes into 1-inch cubes, then place them in a large bowl.

Add the olive oil, maple syrup, cinnamon, salt, and pepper, and toss to coat evenly.

Spread the sweet potatoes onto the baking sheet in a single layer.
Roast for 25-30 minutes, flipping the sweet potatoes with a spatula halfway through.
