Ingredients

  • 4 medium-large sweet potatoes or about 4 cups diced
  • ¼ cup olive oil
  • ¼ cup maple syrup
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • teaspoon black pepper

Instructions

  • Preheat your oven to 400 degrees F and lightly spray a baking sheet with olive oil or your preferred non-stick cooking spray.
  • Rinse, peel, and dice your sweet potatoes into 1-inch cubes, then place them in a large bowl.

  • Add the olive oil, maple syrup, cinnamon, salt, and pepper, and toss to coat evenly.

  • Spread the sweet potatoes onto the baking sheet in a single layer.
  • Roast for 25-30 minutes, flipping the sweet potatoes with a spatula halfway through.
  • Remove from the oven, then serve and enjoy!
