Ingredients

  • 3 cups watermelon cubed
  • cups English Cucumber diced
  • ½ cup red onion thinly sliced
  • 2 tablespoons fresh mint thinly sliced
  • ¼ cup olive oil
  • 2 tablespoons fresh lime juice
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground pepper
  • ½ cup Feta cheese crumbled

Instructions

  • In a large mixing bowl, gently toss together watermelon, cucumbers, onions, and mint
  • In a small mixing bowl, whisk together the olive oil, lime juice, salt, and pepper
  • Pour your dressing over the combined fruits and vegetables and toss gently
  • Top with feta cheese
  • Serve immediately
  • Store leftovers in refrigerator up to 1 day

Notes

Pro Tip:
Since this salad has high water content, you'll want to serve it immediately. If you don't think you'll be able to finish the entire salad, serve half and keep the fruits and veggies separate from the remaining dressing. Refrigerate for up to one day.
