Equipment

Ingredients

  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • 1 tablespoon baking powder
  • ½ tablespoon sugar
  • 1 cup shredded sharp cheddar cheese
  • 1 lb bacon cooked and crumbled into pieces
  • 1 cup milk
  • 1 egg
  • ¼ cup applesauce

Instructions

  • Preheat oven to 375-degrees. You'll definitely want to use muffin liners here because these babies will stick to your pan and there's nothing to love about that!
  • Stir together the dry ingredients and mix in the cheese and bacon. I used Kraft's Triple Cheddar Blend - Oh gosh, so good - but you could use any cheddar you have.
  • Beat egg, milk, and applesauce together then mix in with the dry ingredients until just combined.

Notes

So, two things here, it will seem like the mixture is really thick and like there's not enough batter, and, it's OK if there are lumps. The thing is, there are lots of bits of bacon and cheese, so it's really heavy on the mix-ins, but the proportions are right, and given that fact, there will definitely be lumps. Just don't over mix the batter and all will be well!
Spoon into a paper-lined muffin tin and bake for 15-20 minutes. I recommend you let these cool a bit before eating since the papers won't stick as much.
