Instructions
Preheat the oven to 350-degrees F.
Butter a square 8x8or 9×9 baking dish.
Beat together butter, sugar, and vanilla, then add flour to create the crust.
8 tablespoons salted butter, softened,
¼ cup granulated sugar,
½ teaspoon vanilla extract,
1 cup all-purpose flour
Press the dough into the bottom of the baking pan firmly.
Bake for 15 minutes, then let rest for 5-10 minutes.
Meanwhile, chop the figs into small pieces.
9 ounces dried figs
Add water, sugar and the chopped figs to a saucepan over medium-high heat for 10-12 minutes until the figs have absorbed most of the water.
¼ cup granulated sugar,
1 cup water,
9 ounces dried figs
When the crust has set, spread the fig mixture evenly over the crust.
For the streusel, use a pastry blender or fork to cut cold butter into the flour and brown sugar. Add a dash of cinnamon, if desired.
¼ cup all-purpose flour,
3 tablespoons cold salted butter, cut into pieces,
¼ cup quick cooking oats,
¼ cup light brown sugar
Sprinkle the streusel mixture over the fig layer and bake for 15-20 minutes.
Allow the bars to cool completely (about one hour) before cutting.
Notes
You can also use room temperature butter instead of melted butter.
