- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ cup + 6 tablespoons butter or margarine
- 1-½ cups light brown sugar, packed
- ⅔ cup granulated sugar
- 2 eggs
- 4 tablespoons water
- 1 tablespoon vanilla extract
- 1 cup flake sweetened coconut
- 2-½ cups semi-sweet chocolate chips
Preheat the oven to 350-degrees F.
Grease and flour a 9x13 baking pan. Set aside.
Sift together the all-purpose flour and baking powder. Set aside.
In the bowl of an electric mixer fitted with the paddle attachment, cream together the butter with the granulated and light brown sugars.
Add in the eggs, water and vanilla extract. Mix to combine.
With the mixer speed on low, slowly add the sifted flour mixture into the mixing bowl and mix until combined. The dough will seem sticky.
Remove the bowl from the mixer and use a spoonula to fold in the flaked coconut and chocolate chips.
Turn the dough out into the prepared pan and use the back of the spoonula to spread the batter evenly.
Bake for 30 minutes until the bars are golden brown.
Let cool before cutting into squares or bars.
