Preheat the oven to 350-degrees F. Grease a 9x9 baking dish and set aside.
Pre-bake the tater tots on a baking sheet at 350-degrees F for 10-15 minutes until they are almost crispy and golden brown.
1 lbs 16 ounces frozen tater tots
In a large skillet over medium-high heat, cook the ground sausage. Drain off the excess fat.
1 lb ground breakfast sausage
In a large measuring cup, whisk together the milk and eggs. Season with onion powder, salt and pepper.

Add a layer of tater tots to the bottom of the baking dish.
Top with half of the cheddar cheese and half of the colby jack cheese and all of the ground sausage.

Pour the egg mixture over into the dish.

To cook immediately, bake uncovered for 25 minutes.
Remove from the oven and top with the remaining cheese and tatertots. Sprinkle with bacon.

Return the casserole to the oven and bake for another 5-10 minutes until the sides are bubbling, the egg mixture has set up and the top is golden brown.
Remove from the oven and garnish with fresh parsley or chives, if desired. Let rest 5 minutes before cutting.

To make this ahead of time:Put the cheese and tater tots for the top layer into their own airtight containers or zip top bags. Cover the baking dish with plastic wrap or tinfoil. Refrigerate until ready to bake.When you are ready to bake, remove the plastic wrap or tinfoil. Allow the casserole to sit on the counter about 10 minutes before placing into the preheated oven. Cook and finish assembling as directed in the instructions above.You may need to cook it slightly longer, but keep an eye on it toward the end so as not to burn it.
