Peach Crisp Recipe

An incredibly rustic peach crisp recipe made in a cast iron skillet.

Ingredients

Filling Ingredients:

  • 4-6 peaches
  • ⅓  cup white sugar
  • teaspoons cornstarch
  • Juice from 1 lemon
  • Pinch salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg

Topping Ingredients:

  • cup flour
  • ¼  cup sugar
  • ¼  cup brown sugar
  • teaspoons vanilla extract
  • 6 tablespoons butter cut into pieces
  • ½ cup quick cooking oats

Instructions

  • Preheat the oven to 350-degrees.
  • Peel the peaches and remove the pit.  Cut into bite-sized chunks and place in a mixing bowl.

  • Add the white sugar, cornstarch, salt, cinnamon, nutmeg, and lemon juice.  Let the fruit mixture macerate for 10  minutes.

  • Meanwhile, in a small bowl, mix all of the topping ingredients and combine using a dough blender or the back of a fork until it is crumbly, but combined.
    1 teaspoon cinnamon, ½ teaspoon nutmeg, 1  cup flour, ¼  cup sugar, ¼  cup brown sugar, 2  teaspoons vanilla extract, 6 tablespoons butter, ½ cup quick cooking oats
  • Pour the fruit mixture into the iron skillet.
  • Sprinkle the topping over the fruit.
  • Bake 30 minutes until the peach mixture begins to bubble through and the crispy topping and golden brown.  Remove the skillet from the oven and let cool and set for 10 minutes.  Serve with ice cream, if desired.
