Preheat the oven to 350-degrees F. Line a baking sheet with tinfoil.
Toss the peppers, onions and potatoes with the olive oil.
2 tablespoons olive oil, 6 Potatoes, 1 Orange Pepper, 1 Yellow Pepper, 1 small Red Onion
Season with ground cumin and granulated garlic.
1 teaspoon Ground Cumin, 1 teaspoon Garlic Powder
Next, add the sliced chorizo and the potato mixture to the sheet pan, taking care that the ingredients are in a single even layer. Add the jalapeno slices on top.
1 lb Chorizo Sausage, 1 Jalapeno
Season with salt and pepper.
Sea or Himalayan Salt, Black Pepper
Bake for 30 minutes until the potatoes are almost tender. Remove from the oven and add the tomatoes. Return to the oven set to broil and cook for another 5 minutes. Be sure to watch it so nothing burns!
1 cup Grape Tomatoes
After the potatoes are tender and everything is nice and golden, remove the pan from the oven. Squeeze the juice of 1 lime over the entire tray.
Finally, garnish with slices of avocado, limes and chopped parsley or cilantro.
