BBQ Chicken Mini Pizzas

Ingredients

  • 12 frozen dinner rolls
  • ½ cups cheddar cheese grated
  • 2 cups shredded chicken
  • 1 cup BBQ Sauce divided
  • granulated garlic
  • dried parsley
  • fresh chives for garnish optional
  • thinly sliced red onions optional

Instructions

  • Thaw the dinner rolls following the directions on the package.
  • Preheat the oven to 350 degrees F.
  • Line your baking sheets with parchment paper.
  • Using your hands, gently stretch dinner rolls into a flat circle.
  • Poke holes using a fork to avoid bubbles.
  • Sprinkle the dough with granulated garlic and dried parsley.
  • Partially bake for about 10 minutes until the rolls are cooked through. Do not overbake!
  • While the dough bakes, prepare the chicken. Mix together ¾ cups of BBQ sauce with the chicken and set aside. (Reserve the rest of the BBQ sauce).
  • Spread each roll with a scant teaspoon of BBQ sauce.
  • Add the BBQ chicken and sprinkle with cheese.
  • Bake for 10- minutes at 350 degrees F until the cheese is melted and the crust is slightly golden brown.
  • Sprinkle with fresh chives, if desired.
