Chocolate Chip Cookie Dough Bars

Edible cookie dough and mini chocolate chips topped with dark chocolate ganache make a decadent dessert! These taste like real cookie dough without any risk of harmful bacteria from raw eggs.

Ingredients

For the cookie dough filling

  • ½ cup unsalted butter softened to room temperature
  • ¾ cup light brown sugar packed
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1 14- ounce can sweetened condensed milk
  • 1-½ cups mini chocolate chips

For the Ganache

  • 1-¼ cup dark chocolate morsels
  • ¼ cup heavy cream

Instructions

  • Line a 9x9 pan with parchment paper (this will make it easy to remove the bars later.)

For the cookie dough filling

  • Cream together the butter and brown sugar.
    ½ cup unsalted butter softened to room temperature, ¾ cup light brown sugar
  • Add in the vanilla and stir to combine.
    1 teaspoon pure vanilla extract
  • Alternate the sweetened condense milk and flour, stirring until combined.
    1 14- ounce can sweetened condensed milk, 2 cups all-purpose flour
  • Mix in the mini chocolate chips.
    1-½ cups mini chocolate chips
  • Press the cookie dough mixture into the lined pan.
  • Refrigerate for 2-3 hours.

For the Ganache

  • In a small bowl, combine the heavy cream and dark chocolate morsels.
    1-¼ cup dark chocolate morsels, ¼ cup heavy cream
  • Microwave on low for 30 seconds at a time, stirring in between, until melted.
  • Whisk the chocolate until smooth and then pour it over the top of the cookie dough filling.
  • Use a spatula to evenly spread the mixture.
  • Return to the refrigerator to cool for another 1-2 hours.
  • Remove the bars from the pan by lifting them out with the parchment paper.
  • Cut bars using a long sharp knife. Store leftovers in the refrigerator.

I cut these fairly small as they are so rich and decadent!
Variations
While I suggest you follow the recipe exactly the first time you make this recipe, here are a few different ways to make them. (Please note, we have not tested these variations.)
  • If you like, add ½ cup of chopped nuts such as walnuts, almonds or pecans to the cookie dough mixture for added crunch.
  • Use mini M and M candies instead of mini chocolate chips. This would be especially fun at the holidays when you could use red and green mini candies.
  • Add ¼ cup of rainbow sprinkles, perfect for birthday parties.

What can I substitute sweetened condensed milk?

Yes, simply mix one cup of evaporated milk with 1-¼ cups of sugar.

How do you get butter to room temp fast?

Room temperature butter will take about 30 minutes sitting on the counter. I don’t recommend microwaving butter to soften it. Instead, cut the butter into 8 tablespoon pieces.
By the time you have prepared the pan and gathered and measured the rest of your ingredients, the butter should be flexible enough to work with.

Is raw flour safe?

While flour doesn’t look like “raw” food, it is and can contain bacteria. Take proper safety precautions by lightly toasting your flour before using it.
  1. Preheat the oven to 350-degrees F.
  2. Line a baking sheet with parchment paper.
  3. Spread the flour out on it in a thin layer.
  4. Bake for 5 minutes.
  5. Remove from the oven and let cool completely before using.
Not only will this make your flour safe to eat, but it also enhances the flavor by cooking out the ‘raw’ taste.
