Busy Day Soup

This easy soup recipe takes very little effort but don't let that fool you. This flavorful soup is loaded with lots of vegetables, tender pasta, and ground beef.

Ingredients

  • 1 pound lean ground beef
  • 1 packet onion soup mix
  • 5 to 6 cups water divided
  • 1 28 ounce can petite diced tomatoes
  • 2 cups frozen mixed vegetables
  • 1 cup uncooked ditalini pasta or any small pasta or rice

Instructions

  • In a large soup pot or Dutch oven, cook the ground beef over medium-high heat.
    1 pound lean ground beef
  • Drain the fat off the beef and return it to the pot.
  • Add in the ingredients for the base of the soup.
    1 packet onion soup mix, 5 to 6 cups water, 1 28 ounce can petite diced tomatoes
  • Bring the soup to a boil.
  • Reduce the temperature to medium heat and let the soup simmer for 45 minutes to develop a savory broth.
  • Mix in the pasta and veggies and cook for 15 minutes until the pasta is tender.
    2 cups frozen mixed vegetables, 1 cup uncooked ditalini pasta
  • Taste and adjust seasoning as needed. I often add a little bit of black pepper.
