1 pound lean ground beef 1 packet onion soup mix 5 to 6 cups water divided 1 28 ounce can petite diced tomatoes 2 cups frozen mixed vegetables 1 cup uncooked ditalini pasta or any small pasta or rice
In a large soup pot or Dutch oven, cook the ground beef over medium-high heat.
1 pound lean ground beef
Drain the fat off the beef and return it to the pot.
Add in the ingredients for the base of the soup.
1 packet onion soup mix, 5 to 6 cups water, 1 28 ounce can petite diced tomatoes
Bring the soup to a boil.
Reduce the temperature to medium heat and let the soup simmer for 45 minutes to develop a savory broth.
Mix in the pasta and veggies and cook for 15 minutes until the pasta is tender.
2 cups frozen mixed vegetables, 1 cup uncooked ditalini pasta
Taste and adjust seasoning as needed. I often add a little bit of black pepper.
