Chicken Apple Sausage Sheet Pan Dinner

This sheet pan meal of tender vegetables and carmelized chicken apple sausage is perfect for busy weeknights!

Ingredients

  • 2 pounds Brussels sprouts trimmed and quartered
  • 3 sweet potatoes peeled and cut into 1-inch cubes
  • 1 red onion cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • Salt and black pepper to taste
  • 6 chicken apple sausages sliced

Instructions

  • Line a large baking sheet with parchment paper.
  • In a large bowl, combine the chopped vegetables with the olive oil, minced garlic, salt, and pepper. Toss to coat.
    2 pounds Brussels sprouts, 3 sweet potatoes, 1 red onion, 2 tablespoons olive oil, 1 teaspoon minced garlic, Salt and black pepper
  • Place the veggies onto the prepared sheet pan.
  • Bake at 400F for 20 minutes.
  • Toss the veggies around and add the slices of chicken sausage to the pan.
    6 chicken apple sausages
  • Return to the oven for another 20-30 minutes until the vegetables are tender and the sausages are slightly carmelized.
