Wash the sweet potatoes with cold water and pat dry.

Preheat the oven to 400 degrees F.
Line a sheet pan with parchment paper.
Using a sharp knife, cut the sweet potatoes into bite-sized pieces.

Mince the garlic gloves and rosemary.

Toss the sweet potato with olive oil, minced rosemary, and minced garlic in a large bowl.

Season with sea salt and black pepper, to taste.

Place the seasoned potatoes onto the prepared baking sheet.
Bake for 12-15 minutes, then remove from the oven and flip the sweet potatoes.
Return to the oven for another 15 minutes.
Remove the pan to sprinkle the top of the sweet potatoes with parmesan cheese and cook for 5 more minutes until the cheese is melted.
¼ cup freshly grated Parmesan cheese
Top with additional cheese and chopped rosemary if desired.
