Beef Queso Dip

This cheesy dip is an easy party appetizer for movie night, or while you watch the big game. With ground hamburg, lots of cheese, and just the right amount of spice, everyone is going to beg for this recipe!

Ingredients

  • 1 tablespoon olive oil
  • ½ lb. lean ground beef
  • 2 tablespoons Mild Taco Seasoning Mix
  • ¼ cup yellow onion diced
  • ¼ cup green bell pepper diced
  • 2 jalapenos seeds removed and diced fine
  • 8 oz Velvetta cubed
  • ½ cup Monterey Jack cheese shredded
  • ½ cup canned diced tomatoes with green chilies drained
  • kosher salt
  • black pepper

Instructions

  • Heat a skillet over medium heat and cook the onions, bell pepper, and jalapeno peppers until tender.
  • Add the ground beef and increase the heat to high.
  • Sprinkle the taco seasoning over the beef and brown, then drain off the grease.
  • Slowly stir in the cheeses, making sure it is incorporated before adding more.
  • When the mixture is smooth and creamy, add the diced tomatoes and season with salt and pepper.
  • Stir in the meat mixture until well combined.
  • Transfer the queso to a serving dish.
  • Serve immediately with tortilla chips for dipping.
