Ingredients
5
medium sweet potatoes
about 2.5 to 3 pounds, peeled and cut into bite-size pieces

orange
zested, and juiced
¾
cup
packed light or dark brown sugar
½
cup
water
8
tablespoons
unsalted butter
1
tablespoon
ground ginger
2
teaspoon
ground cinnamon
1
teaspoon
grated nutmeg
2
tablespoons
vanilla extract
1
teaspoon
kosher salt
Instructions
In a large pot over medium heat, combine the sweet potatoes with the rest of the ingredients.
5 medium sweet potatoes,
1 orange,
¾ cup packed light or dark brown sugar,
½ cup water,
8 tablespoons unsalted butter,
1 tablespoon ground ginger,
2 teaspoon ground cinnamon,
1 teaspoon grated nutmeg,
2 tablespoons vanilla extract,
1 teaspoon kosher salt
Stir to combine so that the sweet potatoes become coated in the nutter and brown sugar mixture.
Cook for 30-35 minutes over medium-low heat, stirring occasionally or until the sweet potatoes are fork tender. (Cooking time will vary).
Remove the lid and continue to cook for about another 10 minutes or until the liquid becomes a syrup consistency.
Season with salt and pepper if desired.
Serve warm.
Notes
Candied sweet potatoes can be made up to 3 days in advance.
