Grilled Ribeye with Cowboy Butter

  • First, remove rib-eye steak from the fridge and let rest on the counter for about 1 hour before grilling.

  • Once the steaks are at room temperature, preheat the grill to medium high, or about 500 degrees F. For most gas grills, it will take about 10 minutes to fully come up to temperature.
  • Lightly brush both sides of the steaks with a little olive oil.

  • Season steaks with coarse salt and freshly ground black pepper.

  • Place the steaks on the grill. If you like, you can add a dash of Worcestershire sauce (optional).

  • Then add 1 tablespoon of Cowboy Butter (or other compound butter).

  • Sear the outside of the steak for about 90 seconds, then flip and repeat on the other side.
  • Now, turn the grill down to medium heat.
  • Cook to your desired temperature (see below for times and temps).
  • Remove from the grill and add another thick pad of butter to the top.
  • Use foil to tent the steaks and allow them to rest for at least 3 minutes, up to 10 minutes.

Notes

For best results, always make sure your grill grates are clean. Brush the grates with olive oil and be sure to start with a hot grill before adding your ribeye steaks.

Why would you put butter on steak?

Not only does butter add fat and richness, but it can also make for a more tender steak. Cowboy Butter is good on just about any cut of beef. It adds so much additional flavor and makes for really delicious steaks.

Is ribeye a good grilling steak?

Ribeye steaks are awesome for grilling because of the great marbling. These are thick steaks similar to filet mignon (but bigger) that are impressive for company and special occasions.

How long to cook ribeye steak on grill

Beef should always be cooked to an internal temperature of 145°F according to FoodSafety.gov, which is the temperature for "medium" doneness. Here are some helpful tips:
  • 135°F for rare - cook for about 3-5 minutes per side
  • 140°F for medium rare - cook for about 4-6 minutes per side
  • 145°F for medium- cook for about 5-7 minutes per side
  • 150°F for medium well - cook for about 6-8 minutes per side
Remember you always want to allow your beef to rest for at least 3-5 minutes, longer for larger cuts. I recommend adding the butter than making a tinfoil tent for your steaks and allow them to rest for 10 minutes.

Recipe Variations
