Ingredients

  • cup peanut butter
  • ½ cup vanilla yogurt not Greek yogurt
  • cup soy, almond OR cow’s milk
  • tablespoons cocoa powder
  • 1 cup quick cooking oats
  • ½ teaspoon vanilla extract
  • ½ teaspoon sweetener such as sugar, honey or agave
  • pinch salt
  • ¼ cup shredded coconut
  • ½ cup chia seeds
  • ¼ cup chocolate chips

Instructions

  • Microwave the peanut butter in a small bowl for 10 seconds. Stir and then microwave for an additional 10 seconds until the peanut butter is super smooth.
  • Mix in the vanilla yogurt, milk, cocoa powder, vanilla extract, and your sweetener of choice.
  • After that, stir in 2 tablespoons of the chia seeds - reserve the rest for the topping.
  • Add the quick cooking oats and just a pinch of salt.
  • Stir well to combine all the ingredients.
  • Transfer the mixture into small containers or jars and cover.
  • Refrigerate overnight to allow the oats to soften and the flavors to blend together.
  • To serve, top with coconut, chia seeds and chocolate chips.

Can you Microwave Overnight Oats?
Yes! If you prefer your oatmeal to be warm, just remove it from the fridge and pop it into the microwave for 1-2 minutes before adding your toppings.
