Silver Dollar Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • cup milk
  • 2 egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon optional
  • 2 tablespoons melted butter
  • cooking spray

Instructions

  • First, mix together the dry ingredients in a large mixing bowl
    1 cup all-purpose flour, 2 tablespoons granulated sugar, 2 teaspoons baking powder, ½ teaspoon ground cinnamon
  • Then, add in the milk, egg, and vanilla extract. Stir to combine.

  • Then, add the melted butter until just combined. Take care not to overmix!

  • Now, spray the silver dollar pancake pan with cooking spray and set it onto a burner heated to medium-high. (You may need to adjust this if your stove cooks hot).

  • Next, pour a tablespoon of batter onto the skillet and repeat until each well of the pan is full.
  • When the bubbles appear on the top of the pancake, flip it using a small spatula.
  • Cook another minute, then remove from the pan and serve hot.
  • Respray the skillet and repeat with the remaining batter.

Notes

How to Store:
Place them in an airtight container between sheets of parchment paper. Refrigerate until ready to serve, then reheat in the microwave.
